Low carb, low FODMAP gut healing muffins

Finding healthy treats to eat while healing your gut is not easy, but I’ve got you covered. These muffins are easy to make and include one of the best ingredients for repairing your gut lining. Collagen.

Collagen is one of the best supplements you can take for leaky gut, along with glutamine.

This is a form of gelatin that dissolves easily in cold water and is used as a supplement to reduce joint pain, boost metabolism and protein consumption and improve the health of your heart, liver, skin and hair.

It also makes this muffin super soft, moist and chewy without tasting anything weird.

I use this brand of collagen because it’s clean, grass fed and well priced.

This recipe also contains cinnamon, which is a great antibacterial spice that also help control and regulate blood sugar.

This healthy muffin recipe is easy to modify based on what kind of fruit, nuts or seeds you tolerate. And if you don’t tolerate nuts or seeds just double the amount of eggs and use a 1/4 cup of coconut flour instead.

If you don’t tolerate any fruit then use 2 tablespoons of honey, maple syrup or monk fruit or just skip this recipe and just start taking a few scoops of collagen daily in water, tea or broth to seal that gut lining and heal those food allergies.

To make this recipe low FODMAP, simply substitute two ripe bananas for the 1/2 cup of persimmon (apple sauce also works). And you can also use macadamia nut butter, which is the lowest carb and lowest FODMAP of all the nuts, or a mix of pumpkin seed butter, almond butter and sunflower seed butter. And add 1/2 a cup of blueberries.

You get the idea, experimentation with this recipe is easy and fun.

These muffins are subtly sweet and high in protein and healthy fats so they’re good for you. They definitely satiate my craving of something sweet and chewy to have with my morning tea. Without all those inflammatory carbs.

Healthy low carb muffin recipe

Ingredients: (makes about 6 muffins)

2 bananas mashed or 2 persimmons or apples peeled and blended into a sauce (approx. 1/2 a cup)

1 scoop of collagen. (About 3 to 4 tablespoons) I like this brand.

1/2 cup of nut or seed butter ( I used sunflower seed butter)

1 egg (preferably pasture raised or organic)

2 Tablespoons of coconut flour

1/2 tsp of baking soda

1 teaspoon of cinnamon or pumpkin pie spice

 

How to

Making this recipe is a dream in these silicon muffin cups. You don’t need to grease them or use cupcake liners and cleaning up is so easy because they are non stick.

Crack the egg in a bowl and scramble it. Add coconut flour, baking soda, cinnamon or pumpkin spice, collagen and fruit and mix well again with a fork or hand mixer. Add nut butter and mix again until everything is well incorporated.

Optional: I added fresh cranberries and pumpkin seeds to my muffin mix but you can leave it out or add your own favorite mix in like chopped dates, coconut chips or chocolate chips.

Pour your battery in your muffin tins. If you are not using silicon you may have to oil the muffin cups. I use this spray coconut oil.

Bake in a preheated oven at 350 for 25 to 30 minutes. Insert a toothpick in the middle, if it comes out clean then the muffins are done!

Enjoy with tea, as a snack or as a well earned dessert as you heal and seal your gut with every bite.
