Paleo cauliflower rice sushi

White foods like sugar, wheat flour and rice feed bad bacteria and yeast in the gut and promote inflammation.

Even thought I no longer have digestive issues, I  believe deeply in the healing power of a grain-free diet. So this past year I’ve been cleaning up my diet and phasing out some of my favorite foods with satisfying and creative substitutions.

Because I didn’t have pressing health issues to motivate me, I decided to make my dietary transition a slow process. Starting first with wheat and sugar, then white potatoes and finally rice.

The problem with giving up rice is that sushi is one of my favorite foods. I feel passionately about sushi. And mostly it is pretty good for you, except for all the sugary, glutenous rice.

I gave up wheat bread by switching to coconut flour bread, I traded in cow dairy for hemp and almond milk and now it was time to replace my sushi rolls.

I discovered that shredded cauliflower is a GREAT substitute for rice, when I recently made fried cauliflower rice. The cauliflower rice tasted better than the real version.

I decided to try homemade sushi with cauliflower rice. It was a weird and adventurous experiment. My favorite kind.

 

Paleo sushi

 

Shred a head of cauliflower with a cheese grater or cut it up into chunks and pulse it a few times in the food processor. To slightly soften the rice, saute it in half an inch of water to soften it. Make sure to cook it down until the water evaporates.

Sushi rollers are cheap and available at Asian super markets, and make the sushi rolling process a snap. You can find Nori seaweed papers at Asian super markets also, but I bought mine at Whole Foods. And of course you can buy all this stuff online.

I used smoked salmon, cucumber (cut into matchsticks) shapes and avocado as the filling. Make sure to only put the topping on the top third of the roll.

Rolling the sushi with the help of the map was easier than I thought it would be. The cauliflower behaved like regular rice. Beautiful. Just slice and eat.
