“Riced” cauliflower: a tasty substitution for rice

I eat grain-free 90 percent of the time. But I miss making fried brown rice.

It used to be one of my go-to, easy comfort dishes. So I decided to make it anyway, without the rice.

It turns out you can grate cauliflower (by hand or in the food processor) to create a texture similar to rice. So I took this substitution for a test drive. And this dish surpassed my expectations.

Here’s my version but I encourage you to add whatever you like. Like veggies that are about to go bad in the fridge. Or your meat of choice.

 

Cauliflower fried rice

Ingredients

1/4 chopped red onion
1 head of cauliflower
2 small chopped carrots
2 slices of organic, nitrate-free bacon
4 chopped bok choy
1/2 cup frozen peas
2 eggs
2 chicken burger patties
Olive oil
Salt, cumin, cayenne

Preparation (20 minutes)

Grate cauliflower by hand with a cheese grater or cut in quarters and pulse for a few minutes in the food processor.

Heat olive oil in pan and add in riced cauliflower and saute for a few minutes. Add a few ounces of water to steam/soften the cauliflower.

Add in red onion, carrots, bacon, bok choy and frozen peas. Cook until veggies soften and bacon cooks through. Then add scrambled egg. After eggs begin to set add in chicken patties and spices.

Make sure you add enough olive oil so veggies don’t stick.

Once the chicken burgers have cooked through, the dish is ready to serve.

Feeds 2 hungry people.

  1. Wow that looks really delicious! I've been seeing a lot lately about the wonderous things cauliflower can do in food. But a rice substitute? That's new!

  2. YUMMY! I've been making a similar version of this for many years using bacon and shrimp sort of shrimp fried rice with green onion, cilantro, diced carrots, cut up sugar snap peas, sliced shitake mushrooms all this fried in coconut oil..
    I also LOVE making a mashed potato style with cultured raw butter, salt and fresh ground pepper.
